How It All Began in Kitakata
Our journey began in Kitakata, a quiet town in Japan’s Tohoku region known for its ramen. There, the founder fell in love with thick, chewy, hand-crinkled noodles. More than flavor, he found connection at Ban Nai Shokudo, run by Shingo and Hisa Ban Nai. Though turned away at first, he returned daily to learn. That persistence led to trust—and a mission to carry Kitakata ramen beyond its borders.
Earning the Right to Share a Tradition
With the Ban Nai family’s blessing, their Kitakata ramen was introduced to the rest of Japan. Over the years it has grown to a nationwide chain in Japan and expanding in the United States. In 2025, the first shop in Germany was established. What we serve today is more than a recipe—it’s the result of hands-on learning, shared values, and the desire to preserve a tradition built on warmth, humility, and everyday comfort.
What Makes Kitakata Ramen Unique
Kitakata ramen is one of Japan’s “Big Three” ramen styles—and for good reason. It stands out for its balance of contrasts—hearty yet light, simple yet full of depth. Our signature noodles are aged and hand-crinkled (temomi) to achieve a chewy texture that holds broth beautifully. We pair them with a clear, pork bone-based broth simmered gently to draw out natural umami. Topped with house-made, melt-in-your-mouth chashu pork, every bowl is a harmony of flavor and tradition.

At Ban Nai, we believe in handcrafting everything with care—from our slow-braised chashu to vegetables we wash and cut fresh daily. Every shop prepares food on-site, with warmth you can taste. Minor variations may occur, but that’s the charm of something made by hand. More than just a meal, we aim to create comfort.
